This delicious wine lingers gently on your palate, offering bright cherry and raspberry flavors with a hint of black pepper. 2003 Cabernet Sauvignon - 100% Estate Cabernet
Our third release captures the essence of our estate vineyard in every glass with expressive deep berry flavors and a sweet broad mouth feel. The wine is youthful and forward with aromas of black fruit and spice. The tannins are round and concentrated, creating an elegant finesse and a long-lasting impression. 2004 Cabernet Sauvignon - 100% Estate Cabernet
Our fourth release showcases a smoky, cedary Cabernet Sauvignon aroma with flavors of blackberry fruit framed by toasty vanilla notes from small barrel aging. Complex and refined, this 100% Cabernet Sauvignon expresses the pinnacle of top-level wine growing in the Paso Robles region. $35.
2005 Cabernet Sauvignon - 93% Estate Cabernet, 7% Petite Sirah
Our 2005 vintage Whalebone Cabernet Sauvignon was crafted exclusively from upper elevation sections of our Estate, selecting fruit from only those vines growing on the steepest slopes, and the rockiest portion of the vineyard. In this area, intense richness of fruit flavor, dense, supple tannins and deep pigmentation result from careful and consistent vineyard management. This wonderfully full-bodied Cabernet Sauvignon is intensely fruit-driven, and evokes flavors of ripe raspberry and black cherry, with a smoky note of oak. In keeping with our desire to build harmony and depth into this wine, we blended in 7% Petite Sirah to give a rich, peppery fruit and spice note to the mid-palate, and to further elongate the finish. $35.

BOB WINE ~ Red Table Wine - 76% Estate Cabernet, 18% Syrah, 6% Zinfandel
Always a favorite of our best clientele, Bob Wine has become a “Cult Classic” in our limited portfolio of wines, and represents a vintner’s blend of Paso Robles’ best red varietals. Developed from a Doc Simpson tradition that involved both duct tape and duck blinds, our 2005 version is a deep crimson-colored beauty. Concentrated red and black raspberry fruit notes, along with a hint of crushed black peppercorns emerge in the aroma. Dried, concentrated fruit character, and briar-berry pie notes develop on the palate, with rich, but soft, dusty tannins melding into a long fruity finish. $30.
2006 Zinfandel - 79% Zinfandel, 7% Petite Sirah, 7% Tempranillo, 7% Counoise
This lively, tangy Zin opens with cherry-vanilla spice aromas that lead to zesty, briar-berry flavors. As the wine evolves in glass, herbal hints emerge from the fruit aromas. In keeping with our winemaking style, the wine displays a rustic note of dusty, dried cherry on the mid-palate, and the wine has a delicious white pepper note on the finish. $30.

Brimming with fruit intensity, our 2004 vintage was created from two distinctive vineyard sources. Blending the unique characteristics of each site, we’ve assembled a wine that has all the hallmarks of age ability, with rich depth of color and tannin, lush texture and a long, peppery finish. 2005 Syrah - 95% Syrah, 5% Petite Sirah
our 2005 Syrah was crafted in a rich, wild berry style. Lushly fruity and ripe with concentrated notes of blueberry and dry red cherry, this version shows hints of toasted walnuts on the aroma, reflecting the fine cooperage in which it was aged. The wine’s dark, luminous pigmentation indicates a bold concentration of character, and the true ripeness of the vintage is fully expressed in this offering. Blended with a small amount of Petite Sirah that adds intensity to the finish, our Syrah is entirely unfined and unfiltered to ensure that all elements of the wine remained intact upon bottling. $30.
